Try this great recipe from Gerry Doyle the chef in Dillions restaurant Ballinamuck, who will be a regular contributor. ************************************* Chef’s Corner by Gerry Doyle Meatloaf with Thyme & Onion Gravy Meatloaf is a traditional comfort food and is ideal for this time of the year. It can also be made with turkey, lamb or pork or even a combination if you like. If there are any leftovers, meatloaf makes a great sandwich filler with horseradish sauce! Meatloaf 1kg Mince Meat 500g onion diced 2 clove crushed garlic (optional) 2 Tblsp Tomato Paste 2 Tblsp Dijon Mustard ½ Cup Chopped Parsley 1 Tblsp Mixed Herbs (dried) 2 Eggs Beaten 2 Cups Breadcrumbs 1 Tblsp Wostershire Sauce Salt & Pepper to season N.B for Gluten free use Gluten Free breadcrumbs or only use eggs with no crumbs Method: 1. In a large bowl simply add all the ingredients except the breadcrumbs. 2. Mix with your hands so as to combine all the ingredients through the mix. 3. Add the breadcrumbs to tighten the mix (see note to coeliacs) 4. Method A: using a roasting tray place the mix into it and form a loaf bake at 160 degrees for 50 minutes. Method B: Using a baking tin, brush the inside with a little oil and then place the mixture in the tin to form a loaf. Bake at 160 degrees for 50 minutes. 5. After removing from the oven let it stand for 10 to 15 minutes before serving 6. If you are using the roasting tray method, gently place the meatloaf on to a serving tray as you can make the gravy from the juices on the tray. Onion & Thyme Gravy 2 lg onions sliced 1 glove garlic crushed ½ cup red wine 1 tblsp tomato paste 1 tbls chopped fresh thyme 1 tbls butter 3 Cups of water (warmed) 1 Beef Bullion Cube Salt & Pepper to season 1. Place the roasting tray on a low heat, then add the butter , onion and garlic and cook until soft 2. Add thyme, tomato paste and red wine and mix well 3. Add the bullion to the warm water & dissolve 4. Then add the broth to the roasting tray and turn up the heat to bring to the boil 5. When the gravy comes to the boil, reduce the heat and reduce by half 6. Slice the meatloaf and place on a plate with the gravy laced over it. This dish is very nice with creamy mashed potatoes
