PASTA WITH CHARD, WINTER SQUASH AND CARAMELIZED ONIONS NUTRITIONAL NOTES WINTER SQUASH: High in Vitamin A, winter squash, like butternut or delicate, is an important food source for antioxidants like carotenoids that help to fight cancer. Serves: 6 INGREDIENTS: 2 tbsp olive oil 2 medium onions, cut in half and then thinly sliced 1 tbsp minced garlic 4 cups peeled and diced delicate or butternut squash 2 bunches chard, stems removed, washed and chopped, or use kale or collard greens 1/4 cup sundried tomatoes in oil, chopped (optional) 12 ounces kamut, whole grain or gluten free pasta 1/2 cup chopped parsley 1/2 cup crumbled Gorgonzola cheese, blue cheese or feta, or grated fresh Parmesan cheese (optional) INSTRUCTIONS: 1. Heat the olive oil over medium heat in a large skillet. Add the onions and cook, string often, until they are tender and turn golden brown, 15 to 20 minutes. 2. Add the garlic and the diced winter squash, cover the own and reduce the heat slightly. Cook for 5 minutes. 3. Add the chard and sun-dried tomatoes to the pot and continue to cook, covered, until all of the vegetables are tender. This will take about 10 more minutes. If things begin to stuck, add 1/4 cup of water to a pan. 4. While the vegetables are cooking, bring a large pot of sea salted water to a boil. Cook the pasta according to the package directions, just until al dente. Drain, rinse under hot water and return to the pot. 5. When the vegetables are tender, toss them with the pasta along with the chopped fresh parsley. Garnish with cheese if desired.
