PEA SOUP WITH MINT 500 g frozen peas Or shelled 600 ml water 100 g streaky bacon rashers Bunch of mint leaves 100ml of single cream Salt and pepper In a large pot put the water and peas, bring to the boil and simmer for 2 minutes. Take off heat and put to the side to cool. Place the bacon on a sheet of tin foil and grill for 2-3 minutes either side. Remove and leave to cool. When the peas are cool enough put in a liquidiser and add the sprigs of mint keeping back some for decoration. Liquidise until smooth. Chop the bacon and and add to blended soup and whizz again until smooth. Return to the pan and add the cream and mix thoroughly. Gently reheat on a medium heat adding salt and pepper to taste. Ladle into soup plates and decorate with the sprigs of mint. Serves 4
