PESTO OVEN-FRIED CHICKEN (Yield: 4 servings) 1/2 cup basil pesto 4 chicken legs 1/2 cup seasoned bread crumbs Preheat oven to 400°F. Line a large baking sheet with aluminum foil; place a rack on foil. Spread pesto on chicken legs to cover. Place bread crumbs in a large plastic bag. Add 2 chicken legs at a time; shake until coated. Place on rack. Bake for 50 minutes or until coating is golden brown and chicken is cooked through.
