Pasta by Fluke I dont know why, but if I open a tin of corn or a tetra pack of tomato puree and dont use it all, I cant sleep. Yes, Im mad. However, this madness resulted in a super yummy dinner! #DinnerTonight# #1minuteeveryday# #buss1minute# #cookingforme# #payitforward# #youcandoit# #yesyoucan# #justdoit# #gutlessfoodie# #HaanMainPagalHoon# Ingredients: Mini fusilli - 2 fistfulls, al dente Sun dried tomatoes - 3 tbspns, chopped Tinned corn - 1/2 a tin water removed Black olives - 2 tbsp, sliced 1 small cucumber, unpeeled. I peel strips with a peeler , you can dice too Fresh basil - about 10 leaves or if youre using dry, 3/4thtspn Chilli garlic seasoning - 2tspns or if you want, use 6 cloves of freshly chopped garlic and chilli flakes to taste. Salt to taste Pepper to taste Method: 1. Heat the sun dried tomato oil. (I use this instead of regular oil as it adds to flavour.) 2. Add in the drained corn, chopped sundries tomatoes, sliced olives shredded basil and toss on a high flame. 3. Add in the pasta and chilli garlic seasoning. (if using fresh garlic, add it first to the oil but off the flame) 4. Toss well. Check seasoning.
