Pasta with RED sauce and broccoli di rabe? Yes it works and its incredible! I was asked if I would use broccoli di rabe in a red sauce, so here it is. I put my broccoli di rabe in a large pot of boiling water for 3-5 minutes then using tongs to save the water I removed it and immediately into a ice bath to stop the cooking, it goes. After its chilled I removed it and chopped it up and set it aside. In the same pot of boiling water I added my pasta and in this case orecchiette and strain it just 2 minutes short of the recommended cooking time. I took a large skillet and added my red tomato sauce and heated it up. I then added my broccoli di rabe and my pasta. I sautéed this for about 2 minutes. DONE! Topped with pecorino Romano cheese and a drizzle of extra virgin olive oil! I LOVE broccoli di rabe and red sauce! -Daniel Mancini
