Patra.... made by my mom Patra leaves/Colocasia leaves,leaves should b green all over,never buy even if its slightly yellow,(yellow leaves have a bad taste). Wash n pat dry them, with the help of knife remove its veins, be careful while doing this. In a bowl, take chana flour/besan, add salt, chilli-ginger paste, lime juice, oil, little garam masala, powdered sugar, a pinch of hing, a pinch of haldi. mix all these well n slowly add water to make a thick paste. Adjust the taste if required. Now take 1 leaf n apply this paste on it,place another leaf on this and apply the paste,make 3 layers of leaves. Now roll them. Repeat the same with other leaves. when all r done, place them in a strainer (rice strainer) n steam them for 15 minutes. Check with a toothpick, if it comes out clean then its done, if not then steam again for 5-7 minutes. Let it cool. Cut into pieces. In a kadai/non-stick pan heat oil, add rai (mustard seeds), jeera, white til, n then add the cut patras. Mix them all well. Garnish with coriander n grated coconut. Serve with green chutney or with imli chutney.
