Pineapple Banana Cake Friend or follow me facebook/aalaes Join my free recipe group https://facebook/groups/GreatRecipesandMore/ HEY YOU ITS TIME TO get healthy > annagrace.SBC90 / 1 8 oz can pineapple chunks in juice 2 bananas 1 tsp cinnamon 2 large eggs 2 cups flour 1 tsp baking powder 1 1/4 cup sugar 1 cup veg oil (here I used 1/2 cup coconut oil) Plus I added about 1/2 cup whole pecans, you could use walnuts too, if using pieces I would use 3/4 cups, I had whole and just broke them up Preheat oven to 350 Grease 2 8 inch cake pans, I used pam baking spray Peel and add the bananas to a food processor, add the pineapple with juice I dont have a food processor so what I did was used my potato masher and mashed the pineapple in a bowel, then used a plate and fork and mashed the bananas and added them to the pineapple, then I added my 1/2 cup coconut oil which I already melted in the microwave. Whisk together eggs and sugar in another bowl till pale and fluffy fold into pineapple and banana mixture, . Stir in flour, baking powder and cinnamon. Equally divide the mix between the 2 prepared cake pans, bake in oven for 25-30 min or till golden and risen. Leave cakes to cool in pans for about 10 min, then carefully turn onto a wire rack to cool completely To make icing 2 1/3 cups icing sugar 9 tbsp unsalted butter 3 tbsp light cream cheese 1 lemon I used my kitchen add for this, Add butter and whisk for about a min or until smooth. Add icing sugar and continue to whisk till mixture is light and fluffy. Add cream cheese and zest of half the lemon and whisk for 30 more seconds ot until just combined. Spread two-thirds of icing one one cake, place the other on top and spread with remaining icing. ENJOY
