Posting again due to popular demand!! Recipe - Carb-Free muscle Meat Lean mince lasagne We all struggle to stay on the straight and narrow when it comes to show prep and eating healthy- the common misconception is that healthy needs to be boring and flavourless - wrong!! You can still eat healthy, guilt-free delicious food without the stress! This lasagne uses thinly sliced courgette in place of pasta for the lasagne, although you could also use thinly sliced aubergine if you prefer Ingredients: Lots of courgettes thinly sliced length ways For the mince: 800g lean mince 20 button mushrooms 1 red & 1 white onion 1 red bell pepper 3tbsp Heinz sugar and salt reduced ketchup 2tbsp mixed herbs 1tbsp garlic salt 1tbsp black pepper 200ml water 15g (1tbsp) coconut oil 2tbsp bisto beef gravy granules To cook 1) chop you onions to size and add to a hot pan with the coconut oil melted - sweat the onions until soft 2) add the 800g beef mince and stir until brown 3) add all other ingredients, mix together then place on a low heat covered with a lid and simmer for 10 minutes stirring occasionally- add more water if required to keep mixture moist 4) take a deep Pyrex dish, spray with 1kcal oil to ensure the lasagne doesnt stick and put a thin layer of mince covering the bottom 5) add a layer of courgette slices so the mince is totally covered 6) add another layer of mince - continue the layering process so that your final layer is courgettes 7) cover the dish with foil and place in a pre-heated oven at 180degreesC for approx 30 minutes 8) remove from oven and check the courgette is cooked by pushing a knife through all the layers - it should be soft. If the knife meets a crunch put back in the oven and check at 5 minute intervals until soft Enjoy x
