Potato Soup 2 1/2 lbs of red potatoes sliced or dices (I dont peel mine) 2 cans of milk 3 cans of chicken broth 1 tsp salt 1/2 tsp pepper 1 1/2 cup of butter/margarine 1 1/2 cup of flour 1 cup of heavy whipping cream 1 medium onion (OPT) (I dont use) Boil potatoes to desired firmness, drain and set aside. Fry bacon crispy, drain and set aside. Fry onion in bacon grease if using an onion. In large boiler add milk, broth, salt and pepper. Cook over medium heat until steaming- DO NOT BOIL- WHISK OFTEN. In a saucepan melt butter/margarine, add flour while whisking and cook roux until bubbles on the sides. While whisking soup add roux a little at a time until your soup is the desired consistency. Stir in potatoes and whipping cream. Serve and Garnish with cheese, bacon, chives or green onions :)
