Pumpkin Potato Soup “Pumpkin, Pumpkin, What’s Your Function?” 3 cups mashed potatoes, made with low-fat milk ½ cup canned pumpkin 1 ½ cups fat-free/low-fat milk 1 ½ cups shredded, reduced-fat cheese ¾ tsp pumpkin pie spice ½ tsp ground cinnamon 5 tbsp fat-free sour cream Pepper and Salt, to taste 1. Prepare mashed potatoes using milk only (no added butter!). Add pumpkin and fat-free/low-fat milk to medium saucepan; whisk to blend. 2. Add cheese, pumpkin spice, and cinnamon, and stir to combine. Cover pan and simmer over low heat for 5-10 minutes, stirring frequently. Add salt and pepper, if desired. 3. Spoon into five serving bowls, then swirl in tablespoon of fat-free sour cream in each bowl. Enjoy! Walk for 30 minutes! Peruse webmd.
