QUICK, EASY AND DELICIOUS: Here’s a fresh take on an old dinner standby -- ravioli with tomato sauce. Instead of cheese-or-meat-filled ravioli, purchase a specialty ravioli like the ones filled with porotobello mushrooms and Provolone cheese that I recently purchased at Trader Joe’s. Ravioli filled with roasted butternut squash or pumpkin are other possibilities. Prepare the ravioli following package directions, then drain and plate, topping with a pinch of salt and some freshly-ground pepper. While the ravioli is cooking, make a fresh brown butter and sage sauce. Melt a stick of unsalted butter in a sauté pan over low heat and then add a dozen or so fresh sage leaves. Cook the combination until the butter turns brown and the sage leaves have darkened. Spoon the warm sauce and sage leaves over the servings of ravioli and top with freshly-grated Pecorino Romano cheese and some chopped fresh parsley. Serve with a salad as an entrée or as an appetizer to open a dinner.
