Chicken Ratatouille (SERVES 4) • 1 large eggplant • 2 medium zuchinni • 1 medium onion, chopped • 3 garlic cloves, minced • 1 Tbsp. olive oil • 1 lb. cooked skinless chicken breasts, chopped • 2 cans (14.5 oz. each) stewed tomatoes • 2 tsp. dried basil • 1 tsp. dried oregano • 2 tsp. salt • Pepper to taste Directions: 1. Cut eggplant and zucchini into 1-inch pieces, and set aside. 2. In a large saucepan over medium heat, sauté onion and garlic in olive oil until tender. Add chicken, eggplant and tomatoes, and bring to a simmer. Cover and simmer for 15 minutes. 3. Add zucchini and seasonings. Simmer for 10–15 minutes more until vegetables are fork- tender.
