{RECIPE} We had a few requests for my carrot cake recipe after I posted my home grown carrots last week. Its great because you can reduce the sugar loads when you use home grown carrots. So here it is: Basic Carrot Cake 4 eggs 1/2 cup sugar 1 cup oil 2 cups sifted flour 2 teaspoons bicarb soda 2 teaspoons salt 1 teaspoon cinnamon 3 packed cups grated carrot Beat eggs, add sugar and oil. Sift in flour, bicarb soda, salt and cinamon. Add carrot and mix. Bake until cooked at 180 degrees C. Enjoy!
