If you decide that you want to be a baker, its not something to take lightly. You have to really struggle learning your craft for the first couple of years in situations that are not ideal. You have to be ready to fight your way through. If you want to become a high-end pastry chef, get your education at the best school you can afford, apply yourself as intently as you can, and dont let anybody tell you that you cant do it. I cant tell you how many people told us that we cant do what weve been doing for the last 15 years.
