Recipe: a great fall brunch recipe. Potato, Ham & Cheese Bake 2 cups frozen, shredded hash browns, thawed; 1 cup milk; 4 eggs; 1/4 teaspoon pepper; 1 cup cooked ham, cubed; 1/4 cup green onions, sliced; 1/4 cup red bell pepper, chopped; 1 cup cheddar cheese, shredded. Heat oven to 375 degrees. Press potatoes onto bottom and sides of a greased 9-inch glass pie pan. Bake for 10 minutes. Combine milk, eggs, and pepper in medium bowl; beat until well mixed. Stir in ham, 2 tablespoons green onions, and 2 tablespoons red pepper. Sprinkle half of cheese over potatoes. Pour egg mixture over cheese. Bake for 35 to 40 minutes or until knife inserted into center comes out clean. Top with remaining cheese, green onions, and red bell pepper. Let stand 10 minutes before serving.
