#RichCarrotCake: (Carrot, Walnut, Almond/Coconut, Sultana and Lemon cake) Recipe by My lovely Aunty Syeda Nigut Shah. Really thankful to her for such a delicious cake recipe. Ingredients: 100 grams butter (good Quality butter makes your cake more delicious) 150 grams sugar 2 eggs 150 grams cake flour 1 tbsp baking powder 100grams walnuts (roughly chopped) 100grams ground almonds (or subtitute with 50-75 gram coconut powder/shredded ) Sultanas 50 grams (I didnt use in my cake because my family dont like much) 100 grated carrot Half lemon (2-3 Tbsp of lemon juice) Method: 1) Cream butter and sugar. Then add eggs one by one. Mix it well. 2) After mixing add sifted Flour, baking powder. Mix it again very smoothly with hand whisk. 3) Then add grated carrots, roughly chopped Walnuts, sultanas and ground Almonds/coconut. At the end, add lemon. 4) Mix altogether. Dont over mix otherwise batter will turn into a dough form. Bake your cake preheated oven at 180C or 350F or Gas Mark 4 temperature for 35mins. *Quntity of Ingredients are suitable for Regular cake tin. If youre using double quantity then bakeyour cake turn by turn or use 2 cake tins. *Must use Butter paper/ Parchment paper/ Almunium foil for lining the bottom and all sides of cake tin. Cut double piece for bottom size. *One use on bottom and the other one use on top after 10 minutes putting your cake batter in oven and remove it before 10 minutes taking out your cake. (Itll protect your cake colour from getting over dark)
