Roasted Beets with Herbed Goat Cheese. This is a super easy, yet very flavorful dish: 1. In a medium bowl combine 1/4 cup softened goat cheese with 1/2 teaspoon YIAH Traditional Prairie Poultry spice blend and stir until combined. Set aside. 2. Individually wrap 4 beets in aluminum foil and roast in a preheated 400 degree oven until soft when pierced with the tip of a knife (45 minutes to an hour, depending on the size of the beets). 3. When cool enough to handle, peel and quarter the beets. 4. Place the beets in a medium bowl and toss with 1 teaspoon of a good quality extra virgin olive oil. 5. Sprinkle the goat cheese over the beets and gently toss to warm the cheese. *The combination of the earthy beets, the comforting herbs in the spice blend and the creamy goat cheese is incredible
