Rocky Road Cookies 170g Milk Chocolate, broken into pieces 125g Unsalted Butter, cut into pieces 4 Large Eggs 280g Plain Flour 1/2 Tsp Baking Soda 1/2 Tsp Salt 250g Milk Chocolate Chips 250g Miniature Marshmallows 250g Chopped Walnuts Method: Heat oven to 160º Melt the broken chocolate and butter in the top of a double boiler over simmering water. In a mixing bowl, beat the eggs until foamy. Add the melted chocolate mixture and blend until smooth. In a separate bowl, mix the flour, baking soda, and salt. Add to the chocolate mixture and blend. Stir in the Chocolate Chips, Marshmallows, and Walnuts. (The batter will be thick and stiff) Pour into a greased square baking pan and spread evenly. Bake until browned and firm to the touch, about 25 minutes. Place pan on a rack to cool, cut into 8 x 6cm Bars. Makes about 24 bars. Store in the baking pan covered with film at room temp.
