SEEDS An excellent way to include essential fatty acid (EFAs) in the diet is with seeds. Make yourself a combination of sunflower and sesame seeds (for Omega 6), linseed (flax seed) for Omega 3, and pumpkin seeds (they contain both but are higher in Omega 6). The ratio should be one part each of sunflower, sesame and pumpkin to 2 measures of linseed. Store in an airtight jar and refrigerate but use as fresh as possible. You can grind 2 tablespoons to add to breakfast muesli or porridge - or keep them crunchy and sprinkle over salads. The typical diet has tended to create an imbalance of Omega 6 over Omega 3 but this is an easy way to even things out - and EFAs must be included in the diet as the body cannot manufacture them. They are vital for normal body functioning - especially the workings of the brain and central nervous system. They also add a feeling of satiety and satisfaction to any meal they accompany!
