Hard boil the eggs. I recommend using: Julia Child’s method. 2. Store the eggs in water in the fridge. 3. Place the bacon into a cold medium sauté pan. 4.Set the heat to medium and render the bacon until crispy. Don’t “fuss” with the bacon too much, once it easily lifts from the pan, it’s time to turn. 5. Using a slotted spoon or tongs place the bacon on paper towels to cool and drain. 6. Reserve a tablespoon or so of the bacon grease in the pan, discarding the rest. 7. Return the pan to a low heat and add the olive oil. 8. Toss in the onions and cook for about 10-15 minutes until they’re a golden brown and almost crispy. 9. Place into a bowl to cool. MAKING: 10. Peel the eggs and slice length-wise and separate the yolks from the whites, placing the yolks in a medium bowl and the whites on a platter for serving. 11. Add the yogurt, mustard, honey, dill pickle, hot sauce (if using) salt and pepper (to taste) to the egg yolks. 12. Using a fork, mash everything together and stir until smooth and creamy. 13. Place the mixture into a large zip lock bag with a small portion of a corner snipped off or into a pastry bag with a large star tip and pipe equal amounts into each of the egg whites. SERVING: 14. Top each egg with some caramelized onion, a piece or two of bacon, andthen garnish with paprika and a few sprinkles of dill. 15. Serve cold and enjoy!
