School Hot Rolls... Dont those words just make you feel all warm and fuzzy? They were worth their weight in gold to any grammar school student. Fall is here, and within a couple months much cooler weather will be arriving here in South Louisiana, so make some of these rolls and prepare to be all warm and fuzzy. This recipe is passed to us from a school cafeteria worker who made thousands of these rolls. SCHOOL HOT ROLLS Yield: 3 dozen of the double rolls 1 quart warm water 2 pkgs. yeast 1 cup sugar 1 cup powdered milk 1 Tbs. salt 7-9 cups All Purpose Flour 1 cup oil In a medium mixing bowl combine water, yeast, and sugar. Set aside and allow yeast to dissolve. In a separate bowl combine milk, salt, and about 5 cups of flour. When the yeast dissolves, add the oil, and pour the wet mixture into the dry mixture. Add flour a little at a time until it gets to the right consistency. You dont want it too sticky, but you also do not want it too heavy. Allow dough to rest 15 minutes on a floured surface, then shape into whatever shape you want. Use muffin tins, loaf pans, free-form, etc. Cover dough and allow to rise double in size, approximately 1 hour. Bake at 350 degrees for 15-20 minutes or until you get the coloring you want. Use this for rolls, buns, loaves, pizza crust, or pig in a blankets. Enjoy! I hope it brings you back to your school days. NOTE: Im not sure on substitutions for ingredients in this recipe.
