Shake n Bake friday is a tribute to my mums Afghans. They are the smell of my childhood. Walking in the door from school to the smell of freshly baked Afghans was just the best thing. Being one of four kids there was always a bit of jockeying to get the first ones, but mum would always double the recipe so that no one missed out. Happy days. My Mums Afghans (makes 12) Ingredients 180g unsalted butter (softened to room temp) ½ cup caster sugar 1 tsp vanilla essence 1¼ cups of plain flour 3 tbsp good quality cocoa 2 cups fresh corn flakes 100g dark chocolate (melted) 12 walnut halves To prepare the Afghans Place the butter and sugar in a stand mixer with the paddle attachment and beat until white and fluffy (2 mins) Add the vanilla essence and mix well. Sift in the flour and cocoa and mix until completely combined and when the mixture starts to clump up and come away from the sides of the mixing bowl. Add in the corn flakes and mix until fully incorporated. Roll dessert spoonfuls of the mixture into balls and place on a baking tray, allowing room for them to spread. Press each ball lightly with a fork. Bake for 15-17 mins at 180°C until cooked. Remove and allow to cool. To finish spoon the melted chocolate over each afghan then top with a walnut half.
