Shamas Mexican pulled pork 2tsp ground cumin 1 dried chipotle chili (I found these at essential ingredient) 2tsp dried oregano 2tsp salt 1/2 tsp ground black pepper 2tbs honey 1 onion peeled and quartered 6 garlic cloves smashed 1 cup of chicken stock 1 cup of tomato purée Juice from 1 orange and 1 lime 1.5 kg of pork for pulled pork cut into 3-4cm chunks ( I just ask my butcher) Grind cumin, salt, pepper, oregano and chili in a mortar and pestle. Rub into the meat and put in the cooker. Put rest of the ingredients in and cook until meat falls apart. Pull out the meat and shred. Blend the liquid thats left in the cooker with a barmix place in pan and reduce until slightly thicker. Then place the pork back in the juices to heat up. All done yum! I usually serve with homemade tortillas. With sour cream and avocado. Zesty slaw: cabbage, salt, pepper,olive oil, dash of sour cream, lemon juice, honey. I just do it to taste no measurements. Pineapple salsa: cut fresh pineapple, Spanish onion,salt,pepper, olive oil.
