Since my family can not get enough honeycrisp apples while they are in season this recipe from Self Proclaimed Foodie caught my attention. I used my prized Tahitian vanilla beans. The house smelt amazing while it was cooking. It is so very delicious. So sweet you wont believe its made with no added sugar. The speckles of vanilla throughout makes it beautiful to look at too. I think tomorrow Ill be doing the same thing but with a lots of extremely ripe bartlett pears I have screaming to be transformed into something in a jar! Adding a bit of ginger to the pears might be a good idea too. Ive included a cock pot option below. I did mine in a pot on the stove. I use a food mill, so I just quarter the fruit and throw it in the pot. Skins, seeds, stems and all. If youre not using a food mill, youll peel and core the apples, skip the food mill step and just jar up your applesauce! If youre not canning, this will keep two weeks in the refrigerator in an airtight container. I guarantee it will be long gone before that much time passes though . » 10 large honeycrisp apples » 6 Tbs. bottled lemon juice. » 2 cinnamon sticks » 2 vanilla beans Quarter apples and put in pot. Add the lemon juice and 1/4 cup water. Split the vanilla beans, scrape seeds, add beans and pods to the pot. Toss in the cinnamon sticks. Bring to a boil then cook over medium heat stirring occasionally. When apples are very soft remove from heat. Remove bean pods and cinnamon sticks. Run the contents of the pot through a food mill. Following proper canning procedures fill your jars leaving 1/4 headspace. Wipe rims and threads and ad your lids. Process in water bath pints 15 minutes quarts 20 minutes. Crock Pot instructions. Peel, core and thinly slice your apples. 1.Put apple slices in large slow cooker. 2.Add lemon juice and toss to coat. 3.Add cinnamon sticks to slow cooker. 4.Split vanilla bean and scrap seeds with knife. Add bean pod and scraped seeds to slow cooker. 5.Cover and cook on high for 4 hours. There should be no need to add water. When done, stir with large spoon to achieve desired consistency.
