(6 photos) Smoked Bacon Wrapped Chicken Cordon Bleu 6 Chicken breast (For large chicken breast 3 can be used and filet them in half) 30 slices of bacon 6 slices of deli smoked ham 6 slices provolone cheese Pound out Chicken breast so it is about 1/2" thick if needed First lay out 4 slices of Bacon vertically and 1 horizontally. Layer a Chicken Breast, Ham, Provolone Cheese on top of bacon, and repeat the process. Roll the layers and then use the horizontal piece of bacon to seal the ends. Truss up with stretch hot cooking bands rather than toothpics. Smoking - Smoke the Bacon Wrapped Chicken Cordon Bleu for an hour using Apple Wood Chips. Bump temperature to 320ºF. Pull when they reach 165º on an instant thermometer. (Do not over cook.) then rest under a foil tent for 15 minutes. Another cooking option - Oven cook chicken in a 350 degree oven for 30 to 40 minutes, or until chicken is done and registers 165 on an instant thermometer. (Do not over cook.)
