So... I felt like beans yesterday... not green beans... starchy beans. When I think beans, I am naturally reminded of comfort food. Good, hearty, old fashioned homely fare. So I got bags and bags of various dried beans... black beans, navy beans and Romano beans. My first thought, you know, since it snowed again, was to make something as hearty and comforting as it gets... thus, baked beans. So with the soaked, softened navies, I saturated them with brown sugar, molasses, mustard, tomato and having dumped it all into the two lasagne dishes, topped them up with the juice from the soaked beans. Topping it up every hour or so with the bean juice... 8 hours later, voila! I have never tasted a more perfect baked beans! The Romano beans... another homely winter dish! About a year ago, I learned this recipe from the Mennonites up in Lucknow. Chuckwagon bean stew... I started with lots of tomatoes in the crock, adding brown sugar, molasses, vinegar, spices... to make what was essentially a chunky barbecue sauce! Added the softened Romanos and a couple pounds of ground beef... and forgot about it in the crock until the whole house smelled incredible! Still working on the black beans... actually it sounds like it needs checking...
