So I will admit that I dont try many recipes. Not from lack of wanting to, but just dont get around to it. Tonight I combined two recipes into one that I have found on Facebook. It is a chicken bacon jalapeno baked chimichanga. Its a mouthful I know, but so worth every bite. I will post the way I made them tonight. You can tweek it however you need. Ingredients: Whole chicken 4 jalapenos Bunch green onions 2 bottles of bacon pieces 4 cups sharp cheddar cheese grated 1 1/2 cups grated parmesan 4 8oz cream cheese Sour cream Tortillas Cooking spray Boil chicken until done and shred Chop jalapenos and combine in a pan with chicken. Steam for about 15 minutes. Combine chicken mixture, cream cheese, cheeses, onions, 3 heaping tbsp sour cream, bacon, and mix until combined. Heat oven to 350 Spoon mixture into tortillas and roll, tucking ends. Spray each side with cooking spray and place on baking dish. Cook 15 minutes and flip. Continue cooking 15 more minutes. They will be slightly crunchy. Garnish as you want.
