So of course I did not get a picture of the pie prior to it being cut into. But I promised the recipe so here you all are. Italian Prune Pie 2 crust pie crust 3/4 pound Fresh Italian Prunes 2/3 cup sugar 2 tablespoons tapioca flour 2 tablespoons fresh lemon juice • Any type of pie crust rolled out and placed into a pie pan. • Halve and pit prunes. • Cut plums into 3/4-inch-thick wedges and in a bowl toss with sugar, tapioca flour, and lemon juice. • On a lightly floured surface with floured rolling pin roll out dough into an 11-inch round (about 1/8 inch thick). • Transfer dough to a standard pie pan • Spoon filling into shell. • Cover with remaining dough in latice pattern • Brush crust with egg wash • Bake pie in middle of oven 35 minutes I recommend using a cookie sheet under it because it gets juicy. • Check to make sure crust isn’t browning too much cover edge with foil if needed • Bake pie 10 minutes more, or until filling is bubbling and crust is golden. Cool pie on a rack.
