So while on the subject of healthy eating, lunch today is a fresh pea lettuce and mint soup. Saute a small white onion in olive oil with a touch of garlic. Add a finely chopped small potato, and after a couple of minutes the fresh green peas ( frozen is perfectly fine too :)). Add water and season, bring to the boil, then simmer until peas are cooked but still retain their beautiful colour. You can add stock instead of water, but I feel that the ingredients are so flavoursome so you dont really need it. Turn the heat off and add a handful of shredded lettuce. Once the soup has cooled slightly, blitz it in a liquidizer to the texture you like with a few drops of milk. Mine is velvety smooth today :). Reheat and serve with a good dollop of Mummys Red Hot or a little drizzle of Mummys Red Hot Chili Oil - or both! If eating carbs, have with a freshly baked potato and rosemary scone (recipe to follow very soon :D) with a bowlful of Mummys Marinated Goats Cheese. Enjoy x
