Someone was asking how to make Cracklins... Cracklins Enough peanut oil to fill a dutch oven with 1” of oil Pork bellies cut into 2”to3” chunks, or any fat layered pork meat Salt Add peanut oil to large dutch oven and heat to 225*, then add meat… Leave pot uncovered… Keep oil at a rolling boil… The fat on the meat will start to melt away slowly, and shrink… Stir often to keep from sticking to the pot… After a long while the meat will start to float and blister… Remove from oil and allow to cool to room temp… Then heat oil to 375*, put cracklins back in oil for 7minutes… This will cause them to pop like pop corn… Take out and season your cracklins with salt immediately…
