Southwestern Pot Roast Ingredients: 8 small red potatoes, cut in half 3 lb. Boneless roast 1 lb. baby cut carrots 2 tablespoons all-purpose flour 16oz. jar salsa 1.) Place potatoes in 3 1/2 to 4 quart slow cooker. Place beef on potatoes; place carrots around beef. Sprinkle with flour. Pour salsa over meat. 2.) Cover and cook on low heat for 8 to 10 hours. 3.) Remove beef from cooker; place on cutting board. Cut beef into serving pieces. To serve, spoon sauce over beef and vegetables:) You may add whatever seasonings you want to it while its cooking.
