Spartan Roasted Asparagus by Jason Jaksetic 15 minutes Serves 4 Vegan, Gluten-free Ingredients: 1 lbs. of asparagus spears 2 tablespoons olive oil 2 tablespoons of minced garlic Salt and pepper Fire Directions Preheat oven to 425 F, fire up the grill to ‘high’, or build a fire. Break off tough bottoms of asparagus stocks. There are lots of antioxidants in the meaty stalks, so only remove the tough base. Mix olive oil and garlic in a baking dish or bowl. Rub asparagus in the olive oil and garlic. Salt and pepper asparagus as desired. Roast asparagus in oven, on grill, or over fire 10-20 minutes. If using an oven, you can cook the asparagus in the olive oil and garlic sauce by using an oven safe dish. On grill or over fire, you can use aluminum foil to achieve this. Once cooked to desired crispness, pour remaining olive oil and garlic over asparagus, salt and pepper again, then serve.
