Spicy Minced Chicken and Baked Beans Pie with a side of roast potatoes and coleslaw A good pie is a labor of love. Today was the perfect opportunity for me to make it for one I love. My husband’s birthday is approaching and we are going on a road trip!! Since, I wont be able to bake a cake for him this year, I thought of giving him a lavish dinner treat with a good pie, some sparkling wine in a candle lit setting. They say, opposites attract and in our case, that is true for most things. Among other things, his tastes and preferences in food are quite dramatically different than mine. While I prefer lightly spiced food, he loves his spices. I have a big sweet tooth, while he loves tangy spicy curries. This Spicy Minced Chicken and Baked Beans Pie was the prefect way for me to please his palette and I must say, it turned out better than I had anticipated. While I have been making the pie dough and lattice pattern for sometime now, this filling was something I concocted with the ingredients I had at hand. This pie is a mix of Indian spices wrapped snugly in a classic American pie crust which made of an outstanding meal! While the pie in itself is quite filling, I decided to make the evening extra special and serve it along with his favorite roast potatoes and coleslaw. Making this pie is not as difficult as it looks. If you follow certain techniques, plan it well to ensure that the ingredients for the pie dough are freezing cold and ensure you don’t over knead the dough, you will be able to master it in no time!
