Spinach Pie (Spanikopita) Prep Time: 20-25 minutes Cook Time: 40-50 minutes @ 350 Foil-lined sprayed half-sheet pan 13" X 18" INGREDIENTS: -3 # frozen spinach -1 medium onion, diced -2 cloves elephant garlic, finely chopped -6 eggs -1 # cottage cheese -1 # crumbled feta -1/2 cup parmesan -salt and cracked pepper -1 tablespoon dill OR oregano -melted butter -20 sheets phyllo PREP: You could start a day in advance. Saute onions and garlic in olive oil. When clear, place frozen spinach on top and reduce heat. Spinach will thaw in about and hour. Continue to cook, stirring frequently, so liquid evaporates. This might take an hour or so. You can go ahead and finish, or refrigerate this mixture and finish the next day. Layer half the phyllo in prepared pan, brushing each sheet with melted butter. Overlap the sheets as necessary, and leave an overhang around the edges. Make the filling. Combine eggs, spinach mixture, cheeses, and spices. Pour onto prepared phyllo. Layer remaining phyllo on top, as before. Combine top and bottom overhang and fold under to form edges. Brush top and edged with butter. Place in oven. BAKE: @ 350, turning two or three times in the oven, for about 40-50 minutes, or until done. Hints: This is a great side dish. A lot of vegetarians use this as an entree, because of he high protein count. You could easily make two smaller ones with this recipe, and freeze the unbaked one. When ready to use it, thaw it overnight in the refrigerator, brush with more butter and bake as usual.
