Spring rolls are delicious the first time and even better the second and third time. I always try to make food in larger batches. This way I am able to cook less but eat healthy more. I like to use lots of healing spices to load them with flavor and nutrients. These are loaded with ginger, garlic and cayenne. I like to serve them with a homemade spicy apricot dip. The apricot dip provides us a healthier alternative to duck sauce.
