Stilton and sweet potato Soup: 1 onion, diced 2 leeks, sliced 200g sweet potatoes 800ml vegetable stock 150g quark 8 x laughing cow light cheese triangles with blue cheese (2 days healthy extra A but makes a few bowls full) salt and pepper METHOD In a large saucepan and cook the onion and leeks until softened in fry lite.
