Stuffed Artichokes: 4 Large artichokes juice of one lemon 1/2 cup breadcrumbs 1/2 cup parmiganno regiano cheese grated 1 clove crushed garlic 4 sprigs chopped fresh parsley 1 tbs butter 2 tbs olive oil salt/pepper to taste Remove outer tough leaves and trimof the top and stems of artichoke. place in a bowl of cold water with the lemon huice to prevent artichoke from going brown combine remaining ingrediants and mix well, spread leaves of remaining artichoke and insert filling between leaves. place in a non stick saucepan and add water until 3/4 of the artichokes are coered. Drizzle with oil add butter to water and cook with lid on for aprox 1 hour Serve and eat!
