Summer Pudding - redcurrants, blackcurrants, strawberries, blackberries, raspberries and blueberries heated up in a pan with a big splosh of rosewater and sugar to taste...heat til sugar melts then pour into bowls which have been lined with thin slices of crustless bread...cover with clingfilm and then put a plate on top and weigh down with cans or weights if you have them...after about 4 hours in the fridge they can be upturned without falling apart :) Mine were left overnight. Served here with coconut cream ...brekkie!! Ideally you should not see any white bread, so a bigger splosh of rosewater next time :)
