#Sunday Morning Breakfast : The best use of leftover Raisin Bread ever! Cut the stale (but not moldy!) bread into about 1 cubes. No need to be precise. You will add a handful to each muffin liner so approximate how many you will have and use 1 egg per serving. Beat the eggs first with a bit of milk (2 eggs - 1/4 cup whole milk). Put the bread into the egg mixture and just toss and let it sit for maybe five minutes. You dont want the break to fall apart, but pull apart instead like monkey bread. While its sitting, bread some pecans into a saucepan with butter and coconut oil along with 1-2 teaspoons of maple syrup and a bit of salt to contrast the sweet. On medium high, quickly toast/candy these up and aafter you fill the muffin liners with the bread mix & any extra egg mix, top with the pecans. Bake for about 15-20 minutes at 375-400 until they are finished. It varies a little depending on how dry your bread is. You can also mix the pecans into the bread & egg mixture and that will keep them from burning.
