Sweet potato-pecan pancakes (our favorite Saturday morning breakfast!). First cut up and start boiling a big sweet potato - youll want about 1 cup of mashed. Combine dry: 1-1/4 c. Flour, 1/4 c. Pecans, 2-1/4 tsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon, 1/4 tsp each of nutmeg, cloves, ginger and allspice. Combine wet: 1 c. Milk, 1/4 c. Brown sugar, 1 tsp vanilla, 1 Tbs. Oil, 2 eggs. Combine all together with the 1 cup mashed sweet potatoes. Sprinkle more pecans on the batter as you cook the pancakes. We like to put pure maple syrup on top too. Yum!
