Nectar spoils easily, but once ripened into honey, it becomes a stable, high-density, high-energy food. Honey contains more than 20 complex sugars. Small amounts of other substances are also present in honey—flavoring materials, pigments, acids, and minerals—but sugar makes up the majority. This high sugar content is what prevents honey from spoiling.
