THAI CHICKEN FRIED RICE landsofwisdom/?p=6428 For fried rice: 4 tablespoons vegetable oil 2 eggs, beaten 1 red onion, diced 250g (8oz) chicken meat, chopped 4 cups cold, cooked jasmine rice 1 tablespoon of palm sugar 1 tomato, cut into thin wedges 3 spring onions, sliced 2 cups bean sprouts 2 tablespoons crushed, roasted, unsalted peanuts coriander (cilantro) leaves 1 tablespoon soy sauceHOT TO PREPARE GARLIC CORIANDER PEPPER PASTE A simple, extremely useful paste, these three ingredients are the most important combinations of aromatics and spices in Thai cuisine. Used sometimes to simply season a dish, and at others as the basis of a more complex paste. Make fresh as required. Pound white peppercorns in mortar and pestle. Add coriander (cilantro) and garlic and pound to a paste. HOW TO PREPARE THAI FRIED RICE WITH CHICKEN Place 1 tablespoon of oil in a wok over medium heat, add the egg and scramble it. Set aside. Add remaining oil to wok. When hot, add the onion, Chicken and Garlic Coriander Pepper Paste. Sir-fry until chicken is almost cooked. Add rice, fish sauce, soy sauce, sugar and stir-fry for one minute. Add tomato and scrambled egg and stir-fry for one minute. Transfer to serving platter, garnish with spring onions, bean sprouts and peanuts. Serve with a side dish of Hot and Sour Sauce.
