*** TURKEY CHILLI*** Following on from my oats last week, here’s another one of my meals staples. It’s basically chilli, but with turkey mince instead of beef. I make a huge batch and it usually lasts about a week: INGREDIENTS: 1000g TURKEY MINCE - breast is leaner than leg/thigh, using leg this time) 100g KIDNEY BEANS – soaked in water for 8hrs minimum 3x LARGE RED ONIONS 3x BELL PEPPERS – mixed 200g BUTTON MUSHROOMS 30g COCONUT OIL 3x CHILLIES Spices etc will vary – rock salt, black pepper, paprika, chilli powder, crushed chillies, Cholula Hot Sauce. Turkey gets lightly stir fried then into the slow cooker. Repeat for the rest of the ingredients. On a low heat for a good few hours it’s ready . TIPS: - Although turkey is naturally lean I still drain the fat, which is why I add coconut oil to prevent dryness. - Salt works better if you add when you start to cook rather than at the end. You’ll also end up using less. - Spice your veg, not your meat – the slow cooker will allow everything to soak in the flavour. When trying to stay on top of your nutrition, preparation is key . This is why the batch gets divided into 5 portions, bagged up in my freezer, ready to go at a moment’s notice. I’ll eat each portion with a pack of microwave wholegrain rice. MACROS (approx.): CALORIES – 748 PROTEIN – 47 CARBS – 75 FAT – 25 (this is including the turkey fat) Give it a go!
