Taco Salad Burritos This is something new I really enjoy making, its easy and a bit more healthier then conventional burritos. Ingredients: 1.25 pounds ground turkey 1 bag MIXED chopped salad (the bags of copped salad comes with cilantro, onions and a few other goodies thats why I like to use them adds a lot of flavor and is much easier then chopping all those things one at a time) 1 Tomato 1 can black beans 1 package taco seasoning (or you can make your own to control the salt content. Remember seasoning is not bad sodium is the real problem. You can cut sodium by 100% if you wanted to using your own blend of spices to make taco seasoning. There are lots of recipes for that online if you want to go that route) Empty salad in bowl remove dressing and extras that come with the salad (you can use those on something else some other time) Cook the meat and beans in different pans. Drain the juice from beans after cooking do NOT drain turkey, remember you do not strain turkey meat or it dries out. (if you are using ground beef THEN strain it) After meat is cooked add your seasoning and about 1/3 to 1/2 cups water. Mix meat with seasoning and water till its well coated and simmer for about 10 minutes stir once half way thru and at the end of the simmer. Add the meat, strained beans and chopped tomato to the bowl and toss together till well blended. You can add others things as you like but do NOT add the cheese or the heat from the cooked meat and beans will start to melt the cheese and you get a gooey mess. Now you have your filling you can use it in taco shells, tortillas, pile it on chips or even just eat it as a salad with chips on the side. Add anything extra you want like salad, sour cream or cheese and you have a healthier taco salad style burrito then you would get using beef and store bought seasoning packs with that massive amount of sodium.
