Take pizza dough, roll it really flat, spread something on it (like broccoli, or ricotta and sausage, or sauce) and then roll it (like a roll cake).....scaccia - youll only find it in a small area of Sicily, and for me nowhere is it better than in Modica (Im biased - my family is from there and my mom made it regularly, and my sister (here) and relatives there still make it, although takeout from the bakery is good too).
