The word today is Sous-Vide. This is the next new technique we are going to introduce to BOTANICO. Of course we know that this is an established technique already, it is simply that we have not been able to use it before. I guess you all know that this method involves cooking food in a vacuum sealed bag in a waterbath, at a specific temperature for a set period of time in order to produce food at the required level of doneness. If required depending on the recipe the sear or char is done at end of this process. The result of course is evenly cooked and moist food. We are really chuffed to be able to offer you all these different techniques and expand your dining experience. Hang in there and watch this space.
