There are a few food dishes that I love and bring back wonderful memories of either my mom, gram, or Aunt. Tonight as Im wondering what I want for dinner I deceided to go through the process to make potatoe pancakes from scratch. No boxed stuff in this house. I grew up eating potatoe pancakes at my grams. Id scratch/scrap the potatoes and shed fry them up for me. Yum. My mom and I had a passion for them. We were such die hards one afternoon I was making them for her on the farm and the stove was not heating the oil up for frying right. Mom and I are desperate we were going to make our pancakes. We look at each and both said lets try the side burner on the grill. Yes! when you are desperate and want your potatoe pancakes you will do anything to eat them. Ash drove up a little while later and sees us sitting on porch and wonders what we are doing grilling in the middle of the day and we are like making potatoe pancakes of course isnt this how everyone makes theirs? To share this story further. For years I had been telling Louise and Katie about eating potatoe pancakes, so one visit I took my special potatoe scraper to Earlysville to make them for Louise and Katie. After scraping up the potatoes Louise looks in my bowl and says there is no way shes eating THAT!! Well after frying up a few guess who loved them Louise and Katie. Katie inherited one of my moms special potatoe scrapers after she passed. I knew my mom would want to share her love of this special dish she grew up with as well as I have.
