There are some changes that have happened in the meat department that you may be interested in, so lets take a little tour, shall we? We know that meat that comes from ethically raised animals that have no added hormones or antibiotics is important to many of you, so heres what weve done: All of the beef that we cut in house is now coming from Creekstone Farms. Creekstone cattle are raised and grazed in the upper Midwest on smaller farms that range in size from 30 to 300 head of cattle. They are fed a 100% vegetarian diet, are never ever given antibiotics or hormones, and are raised under strict humane standards. They are all processed at Creekstones own plant with all animal areas designed by Dr. Temple Grandin, arguably the most respected authority on humane handling. And, on top of all that, it is USDA certified premium black angus beef with a tenderness guarantee. Creekstone Farms beef is served in some of the top steak houses in the country and customers are telling us that it is very, very, very good. (Youll have the chance to taste for yourself and ask Creekstone questions directly on November 1st. Stay tuned for details on what else is happening that day.) All of the pork in the service case, including the pork in our bratwursts and sausages, is from Premium Iowa Pork. This pork comes from pigs that are allowed to act like pigs: they are pastured, fed a 100% vegetarian diet, are antibiotic free, no gestation crates are used, and farms are 3rd party audited for animal welfare. They also follow guidelines developed by Dr. Grandin. We have several tasty items in the service case that are now made with chickens from well-respected, local chicken producer Kadejan in Glenwood, MN, including our chicken fajitas and our spinach and smoked gouda-stuffed chicken breasts. All Kadejan chicken items in the case are labeled so you know when youre getting their chicken. (If youre not sure, please ask.) Whole Kadejan chickens are back in the case as well. Theres nothing like a roasted chicken on these cool fall nights, is there? Of course, we have many other local items in the meat department: Everetts smoked white fish and trout (from Lake Superior), Grass Run Farms hot dogs and beef jerky (from 100% grass-fed cattle), Thousand Hills Cattle Company beef sticks and summer sausage (again from 100% grass-fed cattle), Ferndale turkey (a 3rd-generation family farm where turkeys are allowed to run around and act like turkeys), and Gerhards Brats (they source their pork locally and from ethically raised animals). Oh, and all of our fresh fish comes from local fish purveyor Coastal Seafoods, but you probably knew that. We hope you find this information helpful.
