This Cauliflower Fried Rice recipe by Andrea Du Plessis - Vital Expert looks, and is, incredibly delicious. Try it out, here is the recipe: 1 small head of cauliflower 1 tablespoon canola oil 1 medium onion, chopped 1 clove garlic, crushed 2 cups diced vegetables: any combination of peppers, celery, carrots, mange tout, baby marrow, butternut. 1 Tbs Vital Chilli soy sauce Salt and pepper, to taste 1 egg, beaten Grate cauliflower using a blender or grater. Sauté onions in oil until they are translucent. Add garlic and fry until onions turn golden brown. Add diced vegetables and fry on medium heat for 3 minutes. Add cauliflower and soy sauce and cook on high heat for another 5 minutes. When the veggies are about done, make a hole in the center of the fried rice and add in an egg. Mix everything together, making sure egg gets cooked.
